I stumbled across https://www.youtube.com/watch?v=eOqjcRT05CY about using fungi to allow plants to absorb existing nitrogen in the soil, and reducing added nitrogen. I believe legumes fix nitrogen in the soil so there may be at least some partial alternatives to nitrogen via fertilizers. I hope so because nitrogen fertilizer is currently made from natural gas which is getting more expensive. I don't know the facts well enough to take a position. I welcome comments from those that have more knowledge to share.
